Preserving Oldstead with Tommy Banks
Due to limited availability and a particularly beautiful transition into autumn in our garden this year, we’re opening up a small number of places for an exclusive overnight stay experience at The Black Swan at Oldstead, hosted by Tommy Banks.
Tommy will personally lead you through the Oldstead garden, sharing what we’re growing, harvesting and preserving, before cocktails and snacks amongst the garden itself. From there, you’ll join Tommy and our Farm Preservation Team for a hands-on preservation workshop, discovering some of the techniques that have become fundamental to the way we cook at Oldstead.
The experience continues with our Tasting Menu at The Black Swan, an overnight stay and a hearty Oldstead breakfast the following morning. You’ll also leave with an Oldstead Preservation Pack; a little piece of Oldstead to continue exploring at home.

– An intimate Preservation Workshop with Tommy Banks and a member of our Farm Preservation Team

This package is priced at £995, for two.
Please note: Due to the requirement for walking, standing, and navigating uneven surfaces, this package may not be suitable for individuals with limited mobility. We strongly recommend that guests wear suitable footwear and clothing for the tour.
Itinerary:
1.30pm – Arrive in the bar at The Black Swan.
1.45pm – Welcome & introduction to Oldstead from Tommy Banks.
2pm – Garden Tour, led by Tommy Banks, with a non-alcoholic Oldstead cocktail, and snacks prepared by our chefs in the garden.
3pm – A Preservation Workshop led by Tommy Banks and Head of Preservation, Richard Jack
4pm – Check in to your room for some downtime before dinner in the restaurant from our tasting menu
Day of Departure:
8.30am – 9.30am – Breakfast at The Black Swan at Oldstead
10.30am – Check out, with your own foraging kit to take home with you
Terms & conditions:
This package is based on 2 people sharing a room. This package may not be suitable for individuals with limited mobility due to the requirement for walking, standing, and navigating uneven surfaces. A £300 deposit per person is taken at the time of booking. You must cancel your reservation outside of 14 days to receive a full refund minus a £10 administration charge. The remaining balance of the package, all drinks and any extras taken throughout your stay will be payable on departure. In adverse weather conditions we may need to transfer the tour to the day of departure which we will endeavour to do with as much notice as possible.

Dine at The Black Swan Oldstead
The Black Swan is a 1 Michelin-star, a Michelin Green Star and 4 AA Rosette restaurant with rooms by chef Tommy Banks.
Experience a tasting menu that is inspired by the ingredients that we grow and forage ourselves in and around Oldstead. The tasting menu is priced at £195 per person for dinner and £135 per person for Saturday lunch.
Stay at The Black Swan Oldstead
We offer 1 night stays Tuesday - Saturday which include the tasting menu, overnight stay and breakfast in one of our nine beautiful rooms. When The Black Swan rooms are full we offer our packages at our sister site, The Abbey Inn at Byland (located 1 mile away). Please note The Abbey Inn is closed on a Tuesday and Wednesday; check in would be at The Black Swan on both these days.
We also offer 2 night packages arriving on a Saturday or Monday only. Guests will enjoy our tasting menu on Saturday/Tuesday and can experience our sister restaurant, The Abbey Inn, on the Sunday/Monday.
