All About The Process | Episode 15: Wild Garlic Buds

As wild garlic season hits its peak our Foraging and Preservation team have spent the past couple of months gathering wild garlic leaves and now they’re onto collecting the wild garlic buds.

Follow Dickie as he shows us the full process—it’s a real labour of love. Once picked, these buds undergo a 24-hour salt brining process followed by hot pickling, before they patiently sit for up to twelve months to develop the very best flavours.
