With such a short window of opportunity (roughly a month) our Preservation and Foraging teams are out in full force to collect the last of the sap water—a solution of water and minerals. Once cooked down, this liquid gold transforms into a rich concoction with caramel, honey, and molasses-like flavours and textures, perfect for our chefs to incorporate into their dishes.
